The Washington Post (Best Bowls of Soup in DC):
While fellow Washington Post writers fill up on the brothy tubs dished out by 66-year-old mainstay Loeb's NY Deli, this hired mouth would happily down gallons of the roasted-chicken-fueled soup at the recently re-vamped Char Bar.
Yehuda Malka, a chef who's also part of the management group, says he developed the restaurant's three-pronged soup program - which includes a traditional Ashkenazi version based on a family recipe, a yucca-studded Latin American interpretation, and a hawaij-spiked Yemeni offering.
The Ashkenazi is the top seller, he reports, thanks to a mesmerizing broth created by reducing 24 pounds of chicken carcasses and 20 pounds of chicken wings for each 40 gallon batch. He combines some of the rendered fat, known as schmaltz, with garlic and herbs to flavor the dense matzoh balls. The fragrant broth announces its arrival before the server enters your line of sight, the aroma of slow-cooked chicken and vegetables wafting through the open dining room. Each golden spoonful floods the mouth with bits of diced carrots, onions, celery and hunks of juicy shredded chicken ($11).
